14. Carrot Spice Poke Cake
Ingredients:
1 box spice cake mix (approx. 18 ounces)
1 packet sugar-free orange gelatin (approx. 3 ounces)
2 eggs
4 ounces Neufchatel cheese, softened
¼ cup butter, softened
1½ cups powdered sugar
1/3 cup water
1 cup boiling water
1/3 cup vegetable oil
2 cups carrots, shredded
1 teaspoon pumpkin pie spice
Instructions:
Preheat your oven to 350°F. In a mixing bowl, combine cake mix, eggs, water and oil, and stir thoroughly until a thick batter is formed. Add carrots to the batter, and transfer it to a greased and floured baking dish. Bake in the preheated oven for 35-40 minutes, and leave to cool in the oven for 15 minutes before taking out. Poke holes on the surface of the cake with the end of a wooden spoon, and allow it to cool.
Pour boiling water in a bowl of gelatin, stirring until dissolved. Pour this mixture over the cooled cake, and refrigerate for 2-3 hours. To make the icing, beat together cheese, butter and spice in a large bowl with an electric mixer. Add sugar gradually, beating until well blended. Spread this icing over the cooled cake and serve.
